Does anyone have a link, PDF, book or other set of materials on how to properly sing the ison (esp. in a Greek Orthodox setting)?

Isokratema? That's a machine that generates a constant-tone drone. If you want to learn how to do ison, either work with a chanter, or use a keyboard piano for rehearsal (if you have one). This way, you could improve. You could also work with recordings.
