Could someone please tell me the reason for there being eleven Eothinon Gospel readings, and of course eleven sets of exapostilaria etc.

I'm not completely sure, but I would think that it is because there are 11 separate places in the 4 Gospels where the risen Christ appears, hence 11 Resurrectional Gospel readings, and the 11 Exapostelaria and Gospel Stichera to match the reading.

Many thanks Anthony: that makes a lot of sense and confirms what we had guessed might be the reason.

In addition to the eleven post-Resurrection appearances of Christ recorded in the Gospels, the number eleven is used for the number of Eothinon Gospels to honor the eleven disciples who witnessed His Resurrection and to whom He appeared for the forty days.
