http://latin.about.com is a good place to learn Classical Latin. Classical Latin will give you the ability to read and write both Classical and Eccelesiastical Latin. However, Ecclesiastical Latin use a radically different pronuciation. I think this site will explain the differences in pronunciation, but I have not used it since 2000. But the person who runs the site is a wonderful, caring person and she will be most able to help you.
The best way to learn Ecclesiastical Latin is John Collin's "A Primer on Ecclesiastical Latin." It should come with a good supply of pepto-bismol to help you stomach the papal nonsense! http://www.monachos.net/mb/clipart/happy.gif
It is not a difficult language for someone who is familiar with inflected languages, and if you already know a Latin derivative such as Spanish or French, the vocabulary should be easy as well.
I hope this helps.
