I recently received an email informing me that Saint Anthony's Monastery in Arizona (GOArch), has just released on disc and posted on their website, Byzantine Chant sheet music, in Greek, Modern and Traditional English for Liturgy. It has everything! There is information on Byzantine Chant itself. When/if I go back to America, I am getting a copy. We have been waiting years for this one.

This is my favorite site. On it, you can hear examples of traditional Byzantine Ecclesiastical Chant, done well. You can also hear the voices of the great Chanters of the past 70 years. Since it is from Greece, most of the text is Greek, but you can navigate to the music files by clicking "multimedia" and then "sound clips" from the menu on the left. The music files are in the RM format, so they can be downloaded, but a program which converts RM to mp3 is needed if you wish to have mp3 files, or burn cd's.

I would also agree with Edward, that the Divine Liturgy Music project, recently made available through the Saint Anthony's Monastery is a great resource, but more for having written music in western notation of classic byzantine melodies for the hymns of the Divine Liturgy. Here is their website :
